CAPE COD TIMES
Chef Chris Hargy, 36, trained at Johnson and Wales University in Providence, R.I. and once owned a family restaurant. Now he prepares meals for the 30 inmates at Dukes County House of Corrections and teaches those interested how to cook. Here are some of his recipes - basic meals that taste better-than-basic because of Hargy's special touches, like adding just a touch of white vinegar to macaroni and cheese.

Southern Fried Chicken

6 boneless skinless chicken breasts (four ounces each)

1 quart buttermilk

2 cups flour

2 cups bread crumbs

Salt, pepper, celery salt, to taste

Canola oil for frying


Marinate chicken breast in buttermilk for at least four hours. Combine flour and bread crumbs with salt, black pepper and celery salt. Dredge and coat chicken pieces in breading very well and let sit 20 minutes. Heat enough canola oil in deep pan to completely submerge chicken. When oil is hot enough cook chicken 7 to10 minutes. Drain on a paper towel.


Biscuits

5 cups flour

2 teaspoons salt

3 tablespoons baking powder

1/2 pound butter

2 cups milk


Combine flour, salt and baking powder. Blend in butter until incorporated very well. Make a well and add milk, mix until combined and fold dough over unto itself 15 to 20 times. Roll out to one-inch thick and cut out rounds. Brush tops with melted butter, bake 12 minutes in 350-degree oven. Makes 20 large biscuits.


Twice Baked Potatoes

4 baked potatoes

Sour cream, bacon, cheese, garlic, chives, herbs, corn or any other add-in you like

Parsley

Mozzarella cheese


Cut cooked baked potatoes in half and scoop out insides. Make your normal mashed potatoes and add your favorite ingredients (sour cream, bacon, cheese, garlic, chives, herbs, horn). Scoop mashed potato mixture into potato skins so they are very full, top with parsley and mozzarella cheese. Bake in 350-degree oven 30 minutes.


Carrot Cake with Orange Cream Cheese Frosting

1 package yellow cake mix

1 package instant vanilla pudding

1 cup orange juice

1/2 cup vegetable oil

3 eggs

2 teaspoons cinnamon

2 cups carrots, grated

1/2 cup raisins

1/2 cup nuts


Combine cake mix and pudding. Mix in orange juice, oil, eggs and cinnamon. Mix well, then fold in carrots, raisins and nuts. Cook in 350-degree oven for 25 to 30 minutes. Let cool before frosting.


Orange Cream Cheese Frosting


8 ounces cream cheese

1 stick butter, room temperature

3 cups confectioners' sugar

3 tablespoons orange juice

1 tablespoon orange zest


Combine cream cheese and butter. Add confectioners' sugar, a bit at a time until well combined. Add orange juice and zest, mix two minutes more.

One small onion, diced

6 slices chopped bacon

Butter, for sautéing

2 to 3 pounds spicy sausage (like chorizo or linguica)

2 cups rice

1 can kidney beans, drained and washed

Salt and black pepper, to taste

1 tablespoon chicken base (paste sold for soup-making)

4 cups water


Sauté onion with 6 slices of chopped bacon in butter. Add 2 to 3 pounds of spicy sausage and sauté five minutes more. Add rice, kidney beans, salt and pepper, chicken base, and water. Mix well. Cover with lid and bake in 350-degree oven about one hour or until all liquid is absorbed.


Homemade Macaroni and Cheese

1/2 cup flour

1/2 cup butter

4 cups milk

1 tablespoon chicken base

1 tablespoon white vinegar

2 tablespoons Worcestershire sauce

Salt and pepper, to taste

2 to 3 cups shredded cheese

Cooked elbow pasta, about one pound

Ritz crackers, crushed for topping


Combine flour and butter in pan, cook 5 minutes, slowly add milk, mixing well. Bring to a warm temperature and add chicken base, white vinegar, Worcestershire sauce, salt and pepper to taste. Mix in shredded cheese until melted and sauce is thickened. Mix well with cooked elbow pasta, top with crushed Ritz crackers and more cheese, bake at 350 degrees for 45 minutes.

Chocolate eclairs

1/3 cup butter

1 cup water

1 cup flour

5 eggs

Chocolate pudding, pre-made


Melt butter with water, mix in flour and cook 3 to 5 minutes. Let cool 5 minutes then mix in eggs, one at a time, mixing well between eggs. When finished, spoon out on to a baking sheet in golf-ball size portions. Bake at 375 degrees for 30 to 40 minutes. After cooked and cooled, cut in half and fill with pre-made chocolate pudding.

I always wanted to visit Cape Cod, probably because I’d seen so many pictures of breathtaking Cape Cod sunsets. Last summer I spent three amazing weeks traveling around Cape Cod. I could have spent two months. I loved my time there. I have already booked my vacation to Cape Cod for this summer and I’m seriously considering making it my permanent second residence- my home away from home.

Cape Cod boasts lots and lots of lavender! The Cape Cod Lavender Farm overlooks Island Pond in Harwich and is located on twelve secluded acres of land. This is one of the largest lavender farms on the East Coast of the island and contains over 14,000 plants. The farm opened in 1995 and visitors from near and far are always welcome for lavender farm tours. The shed is open year round and customers pay by the honor system. Visitors to the farm are invited to stroll throughout the fields to enjoy the lush scenery. The Cape Cod Lavender Farm is always a popular spot for tourists.

The Hyannis Whale Watcher Cruises have been available since 1981 and always draw in big crowds. Expert naturalists share an intriguing look into the “wonderful world of whales.” Their aim is to provide a platform for conservation and education to people of all ages from all over the world. As an added extra, commentary on the local ecology and history of the area is also given.

Many species of whales live in the waters off of Cape Cod. A trip through Cape Cod Bay will yield an opportunity to see dolphins, harbor porpoises, sea birds and unusual fish.

Cape Cod’s biggest flea market is located in Wellfleet where over 300 vendors gather on a regular basis to sell their wares. There are new items as well as second hand items to be found such as Cape Cod memorabilia, antiques and so much more. There’s a little something for everybody! If you are looking for an enjoyable way to spend an afternoon and are interested in bargains this is the place to go. For the kids entertainment there is also a playground, a dairy bar and of course adequately sized washrooms.

Off season runs until April 2005 and buyer admission during this time is free. It is open on Saturdays and Sundays in the Grill and Wellfleet Cinema parking lot, weather permitting. There are fewer vendors during the off-season, on average about 40.

Keep Cape Cod in mind for your next vacation. Chances are you will like it so much that you will be back again and again. It is virtually impossible to get bored with Cape Cod. I-M-P-O-S-S-I-B-L-E! Hope to see you there!

Forclosures

Foreclosures: Getting there first reaps rewardsBy • Bankrate.com
Buying a foreclosure can be a lucrative investment. Finding a foreclosure before anyone else -- or a "pre-foreclosure" that allows you to be the only person negotiating with a motivated seller -- can give you an additional advantage.
Understanding the foreclosure process gives you some insight into locating foreclosures at their earliest stages.
The federal government forecloses on hundreds of thousands of homes each year. Banks and financial institutions take back homes that they have loaned funds against. They refer to the properties they retrieve as REOs -- for "real estate owned." Within larger banks, there are REO departments devoted to the resale of these properties.
New homes can also appear on bank REO lists. Builders who build "spec" homes, homes not presold but built "speculatively," finance the construction through banks. Sometimes when a builder has several homes that have remained unsold for an extended period of time, the bank will take back the homes. These homes will also appear within the bank's REO listings. Extra efforts can reap rewardsIn some cases and with some additional effort, you can find these homes prior to their foreclosures, or pre-foreclosures. In the case of bank REOs, become familiar with local contacts of REO departments at banks in your city. As you become acquainted with these contacts, you can tell them the type of home you are looking for and the area. If you check back regularly, you may obtain information on homes before they are added to public databases.
When you review the databases further, you will notice that many smaller banks do not include their REO listings. They may have too few foreclosures to have an REO department. Contact these institutions directly and ask for the name of the person designated to dispose of these properties. Again, your effort may reap you information about properties that are not in any public database.
Real estate agents are another source for finding properties prior to foreclosure. When you have decided on the area where you wish to purchase a home for yourself or as an investment, you should contact an agent familiar with the area. Many times real estate agents have clients who need to sell quickly.
Sleuth it yourselfAs you become familiar with an area, you may notice homes that appear to be vacant without any "for sale" sign. You can obtain the phone number for the address from a reverse directory. Many times when people leave a home, they forward their calls to a cell phone or other number. You may reach an owner ready to sell quickly.
Your local newspaper can be another source of information about pre-foreclosures. Check "for sale by owner" and "homes for rent" ads. Sometimes these represent the last efforts of homeowners who are so strapped that they can't afford to lose money toward a real estate commission.
You can also use your newspaper proactively to find pre-foreclosures. When you have identified the area in which you wish to purchase, place an ad in that section. If you wish to obtain investment property, your ad can say, "Will buy your home, you stay in your home" accompanied by your phone number. In this case you purchase the home from the seller and then either lease or lease/purchase it back to them. If you wish to purchase the home without tenants, you can run a similar ad without the option of the sellers remaining in their home.
Finally, public court documents give you information about homes 30 to 180 days prior to foreclosure. In every state, a legal notice must be filed before a foreclosure can be finalized. The length of time between the initial legal action and the final resolution varies nationwide, but the procedure is the same. In most states, a "forcible detainer" is filed. It may indicate the property address, name of the homeowner and amount owed. This action is filed prior to the actual foreclosure and gives you enough information to contact the homeowner directly. In many states, forcible detainers are also used to evict apartment dwellers, so you must check the address of the property to determine if it is a home or an apartment.
Buying a foreclosure or a pre-foreclosure from a motivated seller can be a good investment for you, and in the case of pre-foreclosure, a good solution for someone else.
